Curried Butternut Squash Soup Recipe
Ingredients
- 6 strips of bacon, chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- ¼ tsp curry powder
- ¼ tsp turmeric
- ½ tsp cardamom
- ¼ tsp cumin
- ½ tsp coriander
- salt and pepper to taste
- 4 cups chicken broth, low sodium
- 1 large butternut squash (about 1 lb cubed)
- 1 large apple, pealed, cored and cut into cubes
- 1 cup heavy cream
- 1 tbsp fresh oregano, chopped

- ½ cup goat cheese, crumbled
